In this edition of Sietsema's Secrets, Robert and the Eater video team head to Bosna Express, an Eastern European restaurant situated beneath the Forest Avenue M-Train station in Ridgewood, Queens. Bosna Express is most famous for its pljeskavica, which Sietsema describes as, "Slavic hamburgers made of coarsely ground beef and lamb with enough fat to absorb the smoke of the grill, and enough egg white to give the patties a bouncy texture." Hit play on the video above to see the Bosna Express crew make these very unusual hamburgers, as well as a few other meaty Balkan delicacies.
