It's time to take this Heat Map feature abroad, and we'd like to start things off by focusing on twelve newish spots in Paris that have been garnering serious buzz.

The list that follows represents various trends, among them the prevalent Japanese influence in the city (Nanashi, Passage 53), the endurance of haute cuisine (Les Tablettes, Le 39 V), and the impact of a new generation of chefs that have made Paris a capital for casual and affordable cuisine d'auteur (Spring, Le Dauphin, Rino, Saturne).
