As Burger Week draws to a close, Eater would like to take a moment to consider hamburger's loyal sidekick, the French fry. These days it seems everyone has their own riff on the humble fry, whether they serve them with burgers or mussels or steaks or by themselves, loaded high with toppings on late night bar menus. The restaurants below fry potatoes — and these are all potato fries, sorry yucca and sweet potato fans — in peanut oil, duck fat, beef fat, pork fat, and even lamb fat. They lay out endless selections of dipping sauces and douse fries in all manner of gravy and cheese curds for Americanized poutine. And a hearty handshake to every restaurant in this great country that's serving breakfast fries. You know who you are.
