Eater interviewed chef Chris Bianco about his Phoenix pizzeria, Pizzeria Bianco, earlier today. Here now, Bianco shares some love for other American pizza spots.
Today is my 50th birthday, and I'm feeling a little more reflective than usual. I'm out in London working, thinking about the places I'd love to be eating at tonight if I were somewhere in the U.S. These are eleven of them, but to be honest, this list could have been about 50 names longer. It doesn't include places outside of the U.S. or restaurants like Lucali or Motorino, which I haven't been able visit yet but still manage to inspire me. More than anything, what follows is a snapshot of the restaurants that have moved me and shown me a thing or two about pizza. I've always said that I never want to compete to be the center of the party, but that I just want to be at it. Here's why, in no particular order:
