But heavens, the 32-year-old chef can be rather unpredictable at times, as evidenced by his laundry list of restaurant stints—including many at some of the world's most esteemed operations—over the years, spanning the country from Disneyland to Berkeley to New York and all the way back to Southern California, with his latest gig in San Diego.
