The wine bar trend is showing no sign of fatigue. What's changing is the definition of a wine bar. Gone (mostly) is the age of the goofy wine bar hawking mainstream malbec and cold cheese plates. Over the last few years the traditional wine bar has become more of a hybrid that can include everything from a destination-worthy craft beer list to, err, a winery.
From the craft beer and wine revamp of Hermosillo Club in Los Angeles to SE Wine Collective's winery-cum-bar in Portland, OR to Houston's Underbelly and David Lynch's expert beer and wine program at St. Vincent in San Francisco, here's a map of some of the coolest and most ambitious new wine bars to open in the last six months.
