Here's a short film called The Garbageless Restaurant, produced by NationSwell, about Sandwich Me In, a restaurant in Chicago that has gone two full years without creating any garbage. According to owner and chef Justin Vrany, the restaurant uses only renewable sources of energy, sources local produce and meat, and Vrany "recycles everything himself," bringing all food waste back to his house, where he has many compost buckets. Vrany notes in the video that when he first decided to go green, he "was going to do it all the way."
Compared to typical restaurants, Sandwich Me In creates drastically less waste. "In a restaurant, about eight gallons of garbage is consumed and thrown out into a dumpster in an hour," Vrany says. "We did it in almost two years." Vrany then had an an artist transform the eight gallons of waste into a sculpture, "so we are now officially a zero-waste restaurant." Go, watch:
