Some of his talking points are familiar from other interviews: Bottura talks about deriving inspiration from Modena and how "terroir is everything," because "in a restaurant like ours, it's not just about me, it's about us." But he also speaks fondly about his first restaurant Trattoria del Campazzo, which he opened in 1986, nine years before Osteria Francescana.
