In a TEDx presentation, Jardinière chef Traci Des Jardins talks about growing up in Fresno, her Mexican grandmother, and her career. At one point, she brings up her experiences working in some of the great kitchens of France, like Le Louis XV, L'Arpège, Troisgros, and Lucas Carton. She mentions that in most of those experiences, she was the only woman in the kitchen. "Some people ask me what it was like to work in the male-dominated environment," she says. "But I didn't think about being a woman. I thought about my craft and what I wanted to get out of it. It was never an impediment." See the full presentation below.
