No spirit captures the balmy tropical allure of Miami quite like rum, where names like BACARDÍ Ocho, Havana Club, and Santa Teresa call to mind the Caribbean islands and South American paradises that many of our residents once called home. It’s also the staple ingredient in many of the drinks people post to announce to all of social media they’re in Miami, whether that’s a mojito, daiquiri, or pina colada served in a pineapple.

As August is an especially balmy month, it seems only appropriate that it’s also National Rum Month, where we can spend 31 days savoring the spirit in drinks we maybe haven’t tried before. Around Miami, a handful of bars and restaurants have created some truly exceptional rum cocktails that deserve to be explored. From the swanky parties at Seaspice to the barstools at Minibar, here’s a look at 10 great places to enjoy rum in Miami.

Tucked cozily into a lush street on the southern end of Coral Gables, Fiola is the second outpost of a Washington, D.C. Italian hit that earned itself a Michelin star. The food is an exquisite blend of fresh coastal seafood, house-made pastas, and wood-fire grilled meats like Australian wagyu and Niman Ranch bone-in ribeye. Get your stomach primed for all this deliciousness with the Kassidy, a pre-dinner cocktail made with BACARDÍ 8 Rye Cask, elderflower liqueur, champagne, and grapefruit.

Eating House

This long beloved Coral Gables institution from chef Giorgio Rapicivoli got a new home on pedestrian-friendly Giralda Avenue earlier this year, a welcome return from a brief hiatus. You’d be remiss to stop in without ordering the bucatini carbonara, though Sunday brunches have gained a cult following with signature offerings like breakfast cereal-infused pancakes and buttermilk fried chicken and waffles. Whatever time you go, be sure to wash your meal down with one of Eating House’s spectacular rum cocktails, like the Mr. Pink with Havana Club Blanco, passionfruit liqueur, and coconut cordial.

Café La Trova

This Calle Ocho cocktail bar is like a trip back to Old Havana, where a live Cuban band plays onstage and an all-star team of tuxedoed bartenders shake some of the best drinks in the city. The ambiance is the creation of Julio Cabrera, an award-winning bartender who opened Café La Trova to bring a destination bar to his home neighborhood. There aren’t any misses on the menu, but if the island energy has you feeling like rum, go for the Bertica: chocolate nib-infused Havana Club Classic Rum, Amaro Montenegro, and coffee-accented vermouth. Or, try the Magic City Daiquiri, a classic combination of BACARDÍ Superior, lime juice, and sugar.

Seaspice

Sunday parties at Seaspice are a Miami weekend tradition, where well-heeled guests dress like they’re on the Cote d’Azur and dance the day away by the Miami River. Sultry house beats and white linen fill the afternoons, as luxe yachts tie up nearby and stop in for a few hours of mingling on land. While you’ll likely hear a few cheers for “rose all day’’ at Seaspice, the cocktail menu deserves some attention too. No drink fits better in the shadow of the Miami skyline than the Mimo Mojito, made with BACARDÍ 8, mint, sugarcane juice, and prosecco.

Cerveceria La Tropical

Nothing puts you in a rum-drinking state of mind quite like lounging among banana plants and palm trees at the Miami home of Cuba’s oldest brewery. Cerveceria La Tropical brought its decades-old recipes from Havana to Miami in this tropical Wynwood space, where island fare from Cindy Hutson complements a long list of fruity lagers and easy drinking IPAs. La Tropical has a full bar too, and if you want to blend Cuba’s oldest beer with its most famous rum, try the La Cubana Flaca, a thirst-quenching combination of BACARDÍ 8 Old Cuban with the brewery’s top selling beer, Tropi Flaca Light Lager, and lime, bitters, and simple syrup.

Baby Jane

Though it’s best known as a spot to grab a bowl of hot ramen before a big night out in Brickell, this Asian-inspired corner dive also has regular live music and a fantastic lineup of cocktails. You may be tempted to try one of its top-shelf Japanese whiskeys, but Baby Jane’s rum drinks are low-key gems, highlighted by the the Perico: Santa Teresa 1796, vanilla agave, fresh pineapple juice, fresh lemon juice, and Jamaican No.1 Bitters.

Minibar

What Minibar lacks in seats it more than makes up for in atmosphere, as this hidden gem in the Meridian Hotel has become a hotspot for South Beach locals seeking a cold drink away from the crowds. You’ll find a handful of stools inside, where you can order up a Chocolate Old Fashioned with Santa Teresa 1796, chocolate bitters, sugar, and an orange peel, then strike up a conversation with a nearby resident who’ll undoubtedly have an interesting backstory. But you’re also welcome to take the show outside and enjoy a smooth Mini Mangonada — BACARDÍ Mango Chile, lime juice, mango nectar, citric acid blend, and a Tajin rim — at one of Minibar’s outdoor tables.

Stubborn Seed

Jeremy Ford opened this farm-to-table tasting menu space South of Fifth after working under chef Jean-Georges Vongerichten at Matador Room. In the years that followed, Stubborn Seed earned a Michelin star and became one of the most coveted reservations in South Florida. While Ford’s food menu is always changing — and always worth coming back for — the drink menu stays a little more constant. No matter what he’s plating that night, you can always pair it with the Facundo: BACARDÍ 8, smoked pineapple, passion fruit sabayon, tobacco bitters, and fresh lime.

Inside the Royal Palm South Beach and up a small flight of stairs, you’ll find this Middle Eastern restaurant with some of the most generous portions in the city. Come to Byblos hungry, and kick off your meal in plush surroundings with Turkish dumplings or duck kibbeh. The fried chicken with tahini, zaatar, and hot sauce can feed as many as four people; for something slightly lighter, order the black truffle rice with foraged mushrooms and crème fraiche. If you need a break to digest, order an Old Cuban with Santa Teresa 1796, Champagne, lime, and angostura bitters, and sip it while your appetite catches up.

Villa Azur

It’s like a little slice of Saint-Tropez in South Beach as you step inside this French-inspired supper club, which has become as known for its sparkler-filled all-night parties as it is for its food. The monumental seafood towers and Mediterranean menu options like sun-dried tomato arancini and chateaubriand are reason enough to book a reservation at Villa Azur. But your wee-hours table dancing is best fueled by a cool rum cocktail like the Miami Vice Mojito, made with Santa Teresa 1796, mint, fresh lime juice, simple syrup, and house soda.
