For Kathleen O’Brien Price, food is a way of sharing her unique heritage with others. Kathleen is half Irish and half African-American, and her cooking style is a culinary mashup of the two cultures. Kathleen partnered with Vox Creative and Guinness to create a mac and cheese dish inspired by the flavors of Guinness Draught.
The roasted barley in the beer complements the smokiness of the gouda and bacon, while the creamy nature of Draught complements the rich texture of the dish.

Smoked Gouda and Guinness Draught Mac and Cheese

Directions
Make a roux with flour and butter. When the mixture begins to brown, add the minced garlic.
Next, add the mustard, Guinness Draught, and heavy cream. Stir to prevent lumps, and cook until just boiling.
Remove from heat and stir in cheeses. Add the cooked macaroni and mix until combined. Top with bacon.
Pour into oven-safe dish and broil until golden brown, 5–7 minutes.
Garnish with finely chopped chives and serve.
