Rocco DiSpirito, a superstar chef of the late ‘90s who pretty much left the New York restaurant world at the height of his fame, is back on the line. He’s running the kitchen at the newly remodeled Standard Grill in New York, overseeing a mostly gluten and dairy-free menu with some “indulgences” like risotto and Baked Alaska sprinkled in the mix.
On the Eater Upsell this week, DiSpirito discusses his 20 years away from the New York dining scene, what it felt like to star in the world’s first (and notorious!) restaurant reality show, and how he transitioned from chef phenom to a diet book author and TV star. As a bonus, he and Daniel geek out over keto, probiotics, charcoal, and integrative medicine.
