In all of Santa Fe, you wont find better baguettes than the ones at Clafoutis — a French bakery and patisserie run by Anne-Laure Ligier and her husband Felipe. The couple traveled back-and-forth between France and New Mexico, but couldn’t get the New Mexican desert out of their minds. After selling their bakery in France, and the original stateside bakery they opened in Albuquerque, Anne-Laure and Felipe landed in Santa Fe, taking over a former Cuban bakery.
Felipe arrives daily to Clafoutis at 2:00 a.m., and bakes every baguette that leaves the kitchen; the master baker is also serving French classics like mille-feuille, galettes, and madeleines. Cooking in America host Sheldon Simeon promptly notices the lack of green chile around the bakery. “If people ask, we have some,” says Anne-Laure. “That’s that Santa Fe hospitality,” says Simeon
