From now through the end of May, René Redzepi and his team from Copenhagen trailblazer Noma are cooking wildly expensive meals on the beach in Tulum, Mexico. This pop-up looks like a jungle oasis, with tables in the sand, a bar pouring brightly-colored tropical drinks, and a flame-powered open kitchen where Redzepi and his crew are cooking dishes made with local ingredients.

A table at Noma Mexico is arguably the most covetable reservation in the world right now. The restaurant is fully booked, but curious gourmands can see all the action unfold on Noma Mexico’s Instagram geo tag page. As you would expect from the master of “sense of place” cooking, Redzepi is using many foraged ingredients from the land near the restaurant and fish from the Caribbean sea — it’s gorgeous stuff.
