Blanched salad with tofu mayonnaise on 'Real Chefs Cook Dumb Recipes’

Fans of singer-songwriter Boy George: Do not buy George’s cookbook Karma Cookbook: Great Tasting Dishes to Nourish Your Body and Feed Your Soul — at least according to real chef Sheldon Simeon. In this episode of Real Chefs Cook Dumb Recipes, Simeon is whipping up blanched salad with tofu mayonnaise. “I can usually tell when a recipe looks delicious,” says Simeon, and it’s not looking good for the blanched salad.

Illogically, the recipe calls that each piece of cauliflower, cabbage, broccoli, and spring greens be blanched for one minute — a method that usually only needs a few seconds, and not 60. And even though the tofu mayonnaise shows a lot of promise when tasted on its on, when added to pile of over-blanched vegetables, it’s a dish Simeon can’t quite stomach.
