The bartender innovates by breaking drinks down to the basics at Standby in Detroit

To keep the celebration going for Eater Young Guns, Eater's running photo essays of the 2016 winners all season. Up next: Dorothy Elizabeth, bartender at Detroit's Standby.

At Detroit bar Standby, Dorothy Elizabeth takes her background in the sciences and applies it to the art of cocktail-making. The 2016 Eater Young Guns winner has even been known to ask her old professors at the University of Michigan to let her use their lab to conduct experiments.

Elizabeth thinks about drinks on the molecular level: "I like to combine ingredients that don't work together and make them work together," she says. Below, she walks through two cocktails on the menu at the modern bar.
