Eater Young Guns winner Andrea Borgen opened her Los Angeles restaurant Barcito last year. It’s an homage to her Argentinian background, inspired by the country’s corner bars, and serves small, shared plates and dishes from the plancha — or, as the website says, "great food with even better hospitality." That hospitality starts with the way she runs her business: Employees are paid fair wages and receive healthcare, and for diners, she's implemented a no-tipping policy. "At the core, what's most important to me is the idea that a restaurant is a pillar of the community," the restaurateur says.
