A Spring-Friendly Twist on the Iconic Gin and Tonic

Newish to midtown in New York is Bottle & Bine, an elevated gastropub from the female trio of chef Angie Berry (Asiate), sommelier Gina Goyette (The Dutch), and beer commander Carolyn Pincus (The Stag's Head). In addition to wine and beer, one will also find cocktails crafted by Moses LaBoy (Gotham Bar & Grill) like this spring-friendly gin and tonic twist perfect for warm weather.

The Clash
Makes 1

1 cucumber
1/2 ounce fresh lime juice
1 1/2 ounces gin
3 ounces tonic water
4 basil sprigs
1 1/2 ounces club soda

Using a vegetable peeler, slice thin ribbons of cucumber and wrap inside a Collins glass. Fill glass with ice. Add lime juice, gin, tonic, and basil to cocktail shaker. Muddle ingredients then shake with ice. Strain into Collins glass and top with club soda.
