Chef Takashi Saito of the three-Michelin-starred Sushi Saito is known as one of Tokyo’s premier sushi masters and this video gives some insight as to why.
The video follows Saito through the entire sushi making process, from his visits to the famous Tsukiji Market to the aging of the tuna (see exactly how it’s done). Finally two very lucky diners recap their meal bite-for-bite for the camera with mesmerizing interludes showing Saito preparing each delicate piece.
“There is something magical about watching this man move,” says one of the diners. “The concentration and passion that he puts into every piece its just unbelievable.”
