Watch Alton Brown Make Pumpkin Spice Latte Ice Cream in 10 Seconds

With the help of Stephen Colbert and a fire extinguisher

The seasonal flavor craze that is pumpkin spice has invaded every aspect of the American food industry — protein powder! Salsa! Pop Tarts! — but the progenitor of them all is, of course, the OG pumpkin spice latte. Broadway star and all-around food world hero Alton Brown passionately despises PSLs, but nonetheless he catered to America’s thirst for pumpkin spice last night on the Late Show With Stephen Colbert.

Brown and Colbert made PSL ice cream, but they did it AB-style — that is, with the help of multiple fire extinguishers and CO2 (and the all-important lab coats and safety goggles), enabling them to turn a gallon of pumpkin spice latte into creamy, super-cold ice cream in a mere 10 seconds.
