Reinventing a French Classic With Chefs Ludo Lefebvre and Inaki Aizpitarte

A modern twist on macédoine salad

Macédoine is a French salad consisting of cut vegetables dressed with mayonnaise. Chef Ludo Lefebvre, star on this season of The Mind of a Chef, remembers it as a childhood favorite often made by his mother. But in this video, Lefebvre gets a taste of a modern version, prepared by lauded French chef Inaki Aizpitarte.

"I grew up eating macédoine," Lefebvre says in the video. "I ate lots of it. My mother made it often. She would open a can of vegetables, rinse them, and add a bit of mayonnaise. That's it."

Aizpitarte, the chef behind Le Chateaubriand in Paris, has other ideas. He uses seasonal veggies, and instead of a heavy mayonnaise, he goes eggless. The resulting emulsion, flavored with herb-infused oil, anchovies, and chicken broth, is much lighter, and it brings something new to the plate.

"I like when you reinvent a classic dish like this," Lefebvre says.
