Forget Crowdfunded Restaurants, Two Scottish Chefs Hope to Open a 'Food Studio'

It will have collaborative dinners with botanists and classes on foraging.

Two chefs are hoping to open not a restaurant, but a "food studio," in Edinburgh, Scotland. According to the Kickstarter campaign page, Ben Reade and Sashana Souza Zanella have a combined 25 years worth of kitchen experience. The duo is hoping to raise just over $15,000 to open Edinburgh Food Studio, a place where "[the] arts, sciences, and quality food collide" to create new experiences.

The Edinburgh Food Studio will serve dinners Thursday, Friday, and Saturday evenings, and most of the meals will be collaborative. Read and Zanella want to work with guest chefs, artists, and even people who specialize in subject like poetry, perfume, botany, and ceramics. The pair will also use the space to host master classes on topics such as fermentation, foraging, and butchery. They say that 50 percent of Edinburgh Food Studio's profits will be put toward "researching and exploring Scotland's food."

So far, the team has raised $4,434 and the campaign has 22 days left to go. Rewards for donating to the campaign include a bottle of vinegar made by Reade and Zanella, four-course meals at the Edinburgh Food Studio, and invites to a private party. The funds raised will go toward building out the kitchen and main dining room. Check out a video about the project below:
