Tailgate Recipe to Try This Weekend: Uni Guacamole

An elevated take on this favorite Mexican dip.

Uni and homemade pork rinds? This guacamole recipe from Los Angeles' Petty Cash is the real deal. And now that it's football season, it's the perfect side to any game—no matter what team you're rooting for.

Uni Guacamole with Fresh Chips and Homemade Pork RinDs

Ingredients:2 small ripe Hass avocados, peeled and pitted2 tablespoons fresh lime juice
2 tablespoons finely chopped cilantro
1 tablespoon roasted pepitas (pumpkin seeds), chopped
1 tablespoon chopped tomato
1/2 serrano chile, minced
1 teaspoon finely chopped red onion
Kosher salt
5 pieces of fresh Uni (We use Sant Barbara Uni)

Directions: Peel and pit the small ripe Hass avocados.

Add salt and mash with a whisk.

Squeeze in the lime juice.

Add cilantro, stir and scoop.

Combine the chopped tomato, minced serrano chile, and finely chopped red onion to make a pico de gallo and add to guacamole.

Then top with roasted pepitas.

And garnish with uni.

For Fresh Tortilla Chips: Cut 6" corn tortillas into triangles and fry for 45 seconds.

For Homemade Pork Rinds: Fry smoked large pellets until puffed and add ground crushed red pepper and salt.
