How to Make Perfectly Silky Chocolate Pôt de Créme

NOLA-based chef Tariq Hanna's version doesn't require an oven.

In this video, Tariq Hanna, chef and co-owner of New Orleans bakeries Sucré Chocolate Boutique and Salon by Sucré, prepares his version of a pôt de créme for Tasting Table. "Because I don't have a lot of patience, I don't want to sit there and wait for it to bake in the oven, so we do a very simple stovetop method," Hanna explains. Starting with rich heavy cream, he hadds sugar and fresh vanilla, and then brings the mixture to a boil, tempers in egg yolks, and finishes the custard off with dark chocolate.
