The Definitive Guide to Fall's Most Anticipated Restaurant Openings

Hillary Dixler Canavan is Eater's restaurant editor and the author of the publication's debut book, Eater: 100 Essential Restaurant Recipes From the Authority on Where to Eat and Why It Matters (Abrams, September 2023). Her work focuses on dining trends and the people changing the industry — and scouting the next hot restaurant you need to try on Eater's annual Best New Restaurant list.

From coast to coast, here's where to eat this fall.

Across the United States, chefs and restaurant owners are gearing up for battle: Fall is almost here, bringing with it a bumper crop of new restaurants.

The empire builders will be doing what they do this season. Austin's Paul Qui is bringing a high-end sushi counter to Austin (Otoko) while working on his first Miami restaurant (at Faena Hotel Miami Beach). David Chang should finally be ready to plant the peach-emblazoned flag in Washington, DC (Momofuku DC). Restaurateur Bill Chait continues to tighten his grip on the LA dining scene (Otium, The Rose Cafe).

For some chefs, this fall is the time to do spinoff concepts dedicated to popular menu items. In Portland, Ataula's Jose Chesa is creating a paella restaurant (Chesa), which will share space with a drinking chocolate and churro shop (180). April Bloomfield and Ken Friedman are finally giving the people what they want with a burger-focused concept that might be their own Shake Shack (Salvation Burger). Sean Brock is also rumored to be working on a burger joint, but without confirmation, there's no room for speculative bacon-infused burgers on this guide.

Speaking of fast(er) food, there continues to be plenty of movement into that space. Fine-dining chefs like Joshua Skenes, Roy Choi, and Daniel Patterson (Fat Noodle and Locol, respectively) are readying to make their entry into the very appealing world of scalable concepts. Not surprisingly, many openings are focusing on chicken, from hot Nashville-style (Royals Hot Chicken) to more abstract chicken-and-egg themed fare (The Crack Shack).

Other trends to keep an eye out for: Wood-fired cooking — whether at Francis Mallmann's open-fire restaurant in Miami (at Faena Hotel Miami Beach) or at a New York City pizzeria (from the Charlie Bird team) that will be home to two Stefano Ferrara ovens — continues to call to chefs, not to mention the many serious barbecue projects opening this fall (Mabel's BBQ and Lewis Barbecue immediately come to mind). France is on the culinary radar this season, so do keep an eye out for brasseries, bistros, and all-day cafes. More pop-ups are going brick and mortar. Atlanta

Staplehouse

Location: 541 Edgewood Avenue SE, Atlanta, GA

Projected Opening: Imminent
This "restaurant for a cause" had faced some serious challenges in its multi-year journey to opening, including the untimely passing of founding member chef Ryan Hidinger, whose pop-up with wife Jen was the inspiration for Staplehouse. Now the team sends word that they're finally staffing up and will be opening the doors within the next weeks. Once up and running, Staplehouse has committed to giving all proceeds (after tax and business expenses) to the Giving Kitchen, a non-profit dedicated to providing "emergency assistance grants to Atlanta's restaurant community facing unanticipated hardship." | All Staplehouse Coverage [EATL]

Noble Fin

Location: 5260 Peachtree Parkway, Peachtree Corners, GA
Chef: Jay Swift
Projected Opening: Late fall 2015
This long-awaited seafood destination from 4th & Swift's Jay Swift is making its way towards opening. Swift sends word that this 200-seat restaurant will have a 15-foot-tall wine wall in the dining room (luckily the ceilings are an impressive 24 feet high) plus a full bar space up front. Along with fish, expect the Mediterranean-leaning menu to feature hand-cut pastas, plus steaks and chops for the non-fin-friendly. Austin

Otoko

Slightly delayed from a hoped-for summer opening, Otoko will be empire-building Top Chef winner Paul Qui's ticketed 12-seat sushi and kaiseki counter. Qui is no stranger to sushi and neither is Yoshi Okai, a longtime lieutenant in Qui's empire who taught Qui the ways of sushi at Uchi before the two opened Uchiko together. Qui recently told Eater: "[Otoko's] going to be a lot purer than the other places, than Uchi or Uchiko in a sense… We're going to pull from very classical sushi pieces in nigiri and very classical methods of making sushi, but at the same time, we are using ingredients that are available to us." | All Otoko Coverage [EATX]

Boiler Nine

Location: 214 West Avenue, Austin, TX

Projected Opening: Fall 2015
Originally announced over a year ago, Boiler Nine will be massive (Eater Austin quotes "11,000 feet over four floors"). The bar and grill will find its home in the upcoming Seaholm development, a "future urban oasis" taking shape at a former power plant. Details are still scarce at this point, but expect "an observation deck and bar at the highest level," "an intimate lounge and dining experience in the lowest level," plus "three kitchens — including one with a wood-fire grill that will be open, allowing diners to watch chefs at work preparing food — and a bar on every floor." | All Boiler Nine Coverage [EATX]

Dylan's Oyster Cellar

This is the story of a popular pop-up finally getting a proper brick-and-mortar location. When Dylan's first popped up in the Mt. Vernon neighborhood, savvy diners took note; even as a temporary business, "owner/shucker" Dylan Salmon was generating enough buzz to land a place on Eater's Baltimore Heatmap. With the permanent Hampden neighborhood space, he has enough room for a full kitchen which, according to the website, will be sending out seafood-focused fare like oyster pan roast, clams casino, and shrimp boil. | All Baltimore Coverage [E]

Boston

Parsnip

Parsnip will be taking over the Harvard Square space that was once home to the iconic UpStairs on the Square. Details have been scarce so far, but Eater Boston reports that menu plans include "locally-sourced ingredients with classic technique." Tiger Mama

Tiffani Faison's popular barbecue destination Sweet Cheeks is bringing a hotly anticipated, if unexpected new neighbor: a Southeast-Asian inspired restaurant. At the upcoming Tiger Mama, expect Faison's takes on street food from Vietnam, Thailand, and Malaysia. Charleston

Harold's Cabin

A group of prominent Charlestonians are behind this project, a sort of homage to Harold Jacobs and his Harold's Cabin snowball shop and pioneering gourmet grocery. The new Harold's Cabin, led by RiverDogs's John Schumacher with investment from Mike Veeck and the one and only Bill Murray, will be a two-story affair with a restaurant and a "mercantile." Lewis Barbecue

Location: 464 Nassau Street, Charleston, SC

Texas barbecue has arrived to Charleston thanks to John Lewis, the acclaimed pitmaster of the very excellent La Barbecue in Austin (he's also an alum of Franklin Barbecue). Lewis has been whetting the city's appetite for his opening later this year by doing pop-ups. The brick-and-mortar location will be tricked out with one of Lewis's customer-designed smokers, and the menu features smoked classics like brisket, beef and pork ribs, "Texas hot guts" sausages, plus pulled pork shoulder and basic sides like potato salad and slaw. | All Lewis Barbecue Coverage [ECHS]

Roister

Word on the Chicago street is that lauded chef Grant Achatz and his business partner/ticketed reservations guru Nick Kokonas are getting close to opening the doors to Roister, the team's first foray into more casual dining. Eater Chicago reports the restaurant will be "the antithesis of Alinea or Next" with "rustic and refined" food served in a dining room with "intentionally loud music and tables spaced closely together." Band of Bohemia

A brewpub may not be what you'd expect from a pair of Alinea alums, but Craig Sindelar and Michael Carroll have a plan. Their idea: a "culinary brewhouse" with a seasonally-rotating food menu to compliment an ever-changing array of house-brewed beers. "Each beer would be listed separately followed by three to five food items that would pair well with the drink," reports Eater Chicago. Duck Duck Goat

In partnership with the Boka Restaurant Group, James Beard Award-winner Stephanie Izard is focusing on Chinese and Taiwanese cuisine for her third restaurant, Duck Duck Goat. From a take-out window, Izard will serve her take on Taiwanese street foods including beef noodles, dumplings, and fried chicken bites. Cruz Blanca

Also getting into the culinary brewpub fray is world's most interesting man Rick Bayless. Cruz Blanca is the long-awaited Randolph Street project that will feature "a 10-barrel brewing system, a tasting room, a growler program (along with large bottles of brew), and, of course, food," reports Eater Chicago. Mabel's BBQ

Hometown hero Michael Symon is finally ready to introduce "Cleveland-style" barbecue to the world. Right next door to Symon's Cleveland hit Lola Bistro, Mabel's BBQ will be serving up meats smoked low and slow with regional applewood, and served with a mustard-based sauce with cider vinegar, local maple syrup, and chiles. Madrina

Madrina is the latest project from Misery Loves Co., the same group that brought Dallas Proof + Pantry. Executive chef Julio Peraza is going to be serving a blend of French and Mexican fare — a press rep sends word that this means dishes like hay-smoked foie gras made with jaggery, plantains, pepita, and coconut; and enfrijoladas with homemade cilantro tortillas, duck confit, crispy duck skin, and crema. Filament

It's been over a year since chef Matt McCallister (of the upscale Dallas hit FT33) first told Eater that he was working on a second restaurant, and finally construction is underway. Eater Dallas reports that Filament will be a "casual Southern eatery" with "both approachable and unexpected dishes." Vegas is not only a critical conquest for these red-sauce empire builders, it is poised to be a perfect expression of everything Carbone is about. First of all, the space at the Aria was previously home to Sirio Ristorante, a Vegas outpost from the legendary Maccioni restaurateurs, best known at the family behind New York City's Le Cirque. Michelin-bedazzled chef Alain Ducasse is bringing a $2.8 million blockbuster to the Strip with Rivea and its 007-sounding Skyfall Lounge. Food-wise, executive chef Bruno Riou "plans to serve fare influenced by Provence and Italy" like "house-made pizzettes, pastas, and grilled dishes," reports Eater Vegas. Skyfall Lounge sounds like a luxe affair with multiple levels, an outdoor patio, and "seating islands" around a dance floor. Otium

After over 10 years at the French Laundry, the final few spent as the lauded restaurant's chef de cuisine, chef Timothy Hollingsworth headed to Los Angeles with a plan to open his own place. A couple years (and a barbecue restaurant) later, the doors are almost open at Otium, Hollingsworth's high-end restaurant created with the help of local powerhouse Bill Chait. A press statement promises that Otium, which neighbors the Broad Museum, "strips away the rigid formalities of dining while focusing on the quality of food, warm service, and relaxed casual ambience" with a massive open kitchen, indoor and outdoor spaces, and design guided by "sophisticated rusticity." Rose Cafe

Eater LA's 2012 Chef of the Year Jason Neroni (formerly of Superba Snackbar) has joined forces with the always empire-building Bill Chait to revamp an iconic Venice institution: the Rose Cafe. In the works for about a year, reps send word that Neroni and Chait plan to "keep the roots of the Rose that the community loves, while bringing in updates that will make the food and atmosphere shine." Think SoCal cuisine with global inspiration, a full-fledged bakery, and a new look. Don't worry about the old guard, though. Little Pine

While the name Richard Hall might not ring a bell, his stage name Moby should. The DJ/recording artist/producer is getting into the restaurant business with Little Pine, an eagerly awaited "100 percent organic vegan bistro" in the ever-so-hip Silver Lake neighborhood. The kitchen will be headed up by Food Network regular Anne Thornton, who will serve breakfast, lunch, and dinner. The idea is to create a real neighborhood feel, which means patios, a retail component, and no loud music late at night. Think Moby's too famous to actually run a restaurant? Think again. Trois Mec Matthew Kang

The Facts: The unstoppable culinary force that is Ludo Lefebvre plus Animal guys Jon Shook and Vinny Dotolo (together they have National Eater 38 member Trois Mec and Eater 21 Best New Restaurants member Petit Trois) are opening a new restaurant in Silver Lake. The Speculation: The chefs are apparently still deciding on the concept, which means the possibilities are endless. Will they pay homage to the legendary Mexican restaurant that once lived in the strip mall space? Will they open another hit tasting menu spot? Anything's possible. Locol

Location: 1954 E 103rd Street, Los Angeles, CA

Locol is what happens when LA's street food-focused Roy Choi teams up with San Francisco fine-dining chef Daniel Patterson. This odd couple revealed their plans for a revolutionary fast-food chain back in 2014, and now construction has begun in Los Angeles's Watts neighborhood and a lease has been signed in San Francisco's Tenderloin. Choi has told Eater: "The vision is to create a fast-food concept that's delicious, but do it with the heart of a chef," which means that this will offer fast, nutritious meals that the chefs want to serve at actual fast-food (not fast-casual) prices. With a board of directors that includes René Redzepi, and investors ranging from crowd-funders to Jon Favreau, all eyes are on this odd couple and their ambitious, hopeful project. Louisville

Royals Hot Chicken

2015 Eater Young Gun Ryan Rogers has already made a name for himself doing barbecue in Louisville and now he's at it again, this time focusing on fried chicken. Royals Hot Chicken will be a quick-service restaurant, making it part of a larger fast-casual chicken boom happening nationwide. Roger sends word that he will be offering both "brined and Kentucky pressure-fried chicken as quarters, tenders, and sandwiches" along with "Nashvilles great contribution to fried chicken — Hot Chicken." (He'll also serve "church picnic sides" like broccoli salad and pimento cheese grits.) Maine

Roustabout

Kit Paschal and Anders Tallberg are alums from some pretty major Boston restaurants (Eastern Standard and Hungry Mother, respectively). From an early press release, Roustabout promises the cuisine will be Tallberg's "well crafted, imaginative takes on Italian-American fare."
