From coast to coast, here's where to eat this fall.

Across the United States, chefs and restaurant owners are gearing up for battle: Fall is almost here, bringing with it a bumper crop of new restaurants.
The empire builders will be doing what they do this season. Austin's Paul Qui is bringing a high-end sushi counter to Austin (Otoko) while working on his first Miami restaurant (at Faena Hotel Miami Beach). David Chang should finally be ready to plant the peach-emblazoned flag in Washington, DC (Momofuku DC). Restaurateur Bill Chait continues to tighten his grip on the LA dining scene (Otium, The Rose Cafe).
For some chefs, this fall is the time to do spinoff concepts dedicated to popular menu items. In Portland, Ataula's Jose Chesa is creating a paella restaurant (Chesa), which will share space with a drinking chocolate and churro shop (180). April Bloomfield and Ken Friedman are finally giving the people what they want with a burger-focused concept that might be their own Shake Shack (Salvation Burger). Sean Brock is also rumored to be working on a burger joint, but without confirmation, there's no room for speculative bacon-infused burgers on this guide.
Speaking of fast(er) food, there continues to be plenty of movement into that space. Fine-dining chefs like Joshua Skenes, Roy Choi, and Daniel Patterson (Fat Noodle and Locol, respectively) are readying to make their entry into the very appealing world of scalable concepts. Not surprisingly, many openings are focusing on chicken, from hot Nashville-style (Royals Hot Chicken) to more abstract chicken-and-egg themed fare (The Crack Shack).
Other trends to keep an eye out for: Wood-fired cooking — whether at Francis Mallmann's open-fire restaurant in Miami (at Faena Hotel Miami Beach) or at a New York City pizzeria (from the Charlie Bird team) that will be home to two Stefano Ferrara ovens — continues to call to chefs, not to mention the many serious barbecue projects opening this fall (Mabel's BBQ and Lewis Barbecue immediately come to mind). France is on the culinary radar this season, so do keep an eye out for brasseries, bistros, and all-day cafes. More pop-ups are going brick and mortar. This long-awaited seafood destination from 4th & Swift's Jay Swift is making its way towards opening. Swift sends word that this 200-seat restaurant will have a 15-foot-tall wine wall in the dining room (luckily the ceilings are an impressive 24 feet high) plus a full bar space up front. Along with fish, expect the Mediterranean-leaning menu to feature hand-cut pastas, plus steaks and chops for the non-fin-friendly. The bar and grill will find its home in the upcoming Seaholm development, a "future urban oasis" taking shape at a former power plant. A group of prominent Charlestonians are behind this project, a sort of homage to Harold Jacobs and his Harold's Cabin snowball shop and pioneering gourmet grocery. The new Harold's Cabin, led by RiverDogs's John Schumacher with investment from Mike Veeck and the one and only Bill Murray, will be a two-story affair with a restaurant and a "mercantile." Word on the Chicago street is that lauded chef Grant Achatz and his business partner/ticketed reservations guru Nick Kokonas are getting close to opening the doors to Roister, the team's first foray into more casual dining. Eater Chicago reports the restaurant will be "the antithesis of Alinea or Next" with "rustic and refined" food served in a dining room with "intentionally loud music and tables spaced closely together." Roger sends word that he will be offering both "brined and Kentucky pressure-fried chicken as quarters, tenders, and sandwiches" along with "Nashvilles great contribution to fried chicken — Hot Chicken." It's been nearly 10 years since the BB&G crew, aka Mario Batali and Joe Bastianich, have opened a non-Eataly restaurant in New York, and the city is eager for them to get back in the saddle with La Sirena. Food-wise, reps send word that it's kind of Lupa-meets-Babbo. For those who don't speak Batali, that means there will be trattoria-style meat, fish, and pasta like at Lupa, but with the more upscale feel of the Michelin-starred Babbo. Hungry Pigeon is an all-day affair from chefs Scott Schroeder (South Philly Tap Room, Sardine Bar) and Pat O'Malley (Balthazar Bakery). The concept will play to the chefs' respective strengths: During the day, a cafe-style breakfast and lunch service will showcase O'Malley's pastries, while dinner will be slightly more formal with waiter service. A wildly popular hot dog pop-up going brick-and-mortar sounds like a Portlandia sketch, but in the case of Stray Dogs, there's some New York City edge to it. That's because these haute hot dog makers (haute dogs?) are Johnny Leach and Peter Cho — alums of the David Chang empire and the April Bloomfield empire, respectively. The duo is aiming to open at the end of November, but in the meantime they've been hosting private dinners that have been suspiciously lacking in hot dogs, focusing instead on modern twists on Korean fare, more in line with their occasional Stray Birds pop-ups. There will be a market and a small cafe with take-away options called Herb & Eatery. Then there's a full-service restaurant Herb & Wood. Ace San Francisco chef Kim Alter (Plum) is spreading her wings with Nightbird, an ambitious new project she's bringing to the Hayes Valley. She tells Eater that Nightbird will be a 40-seat restaurant focused on tasting menus. That tasting menu, she says, will "change weekly at first and progress into every other day" with a "strong focus on what is available at the market and classic technique." As if a 40-seat tasting menu destination wasn't enough to work on, Alter is also opening a seven-seat bar in the space. Renee Erickson, cookbook author and the chef behind National Eater 38 member the Whale Wins, is working an ambitious three-in-one project in Capitol Hill. First up, there's the 45-seater Bateau, which Eater Seattle reports "will focus on in-house butchered and dry-aged, grass-fed beef." Then, sticking to her nautical roots, Erickson will be opening Bar Melusine, an oyster bar she is calling the Walrus & the Carpenter's "French Atlantic cousin." Big things are happening for the always-growing restaurant group Huxley Wallace (Westward, Quality Athletics) and its expansion-minded frontman Josh Henderson. First up is Great State Burger, a fast-casual burger shop which sounds like Huxley Wallace's nod to Shake Shack. But here's the kicker: By 2016, Henderson wants eight to 10 locations in the greater Seattle area, with the first opening this fall in Ravenna. Next door, Henderson and the crew are also working on Saint Helens, what Eater Seattle calls an "American-style brasserie cafe" serving breakfast, lunch, dinner, and family-style weekend brunches. Another restaurant marching into Shaw is Kwame Onwuachi's tasting menu temple. Don't recognize that name? That's because Onwuachi is a young chef, striking out on his own after working in the kitchens of Per Se and Eleven Madison Park. Helping him in the front of house is his former culinary school roommate and EMP colleague Greg Vakiner and co-owner Kelly Gorsuch, a local salon owner.
