Here's a stunning video from Engawa, an upscale Japanese restaurant in London. Chef Akira Shimizu shows viewers how to prepare a dish of seared Kobe beef, which happens to be the meat the restaurant specializes in. He starts by sharpening a beautiful Japanese knife. He then skillfully cuts a filet of Kobe beef, which he scores before searing it off in a pan drizzled with oil. Shimizu slices the fatty caramelized beef and plates it with some lightly charred vegetables, including okra. Go, watch.
