Last night chef Eric Ripert (Le Bernardin, Aldo Sohm, New York City) stopped by the Late Show with David Letterman to promote his forthcoming culinary travel show Avec Eric, and make sea urchin pasta. Letterman jokes that the spiny creatures are "like the latest menu item at Dunkin' Donuts" before trying to eat one of the spiny shells.
Later, he nearly stumps Ripert when he asks what family sea urchin are in. (After a pause, a bright red Ripert exclaims, "they are shellfish!") Ripert is all business and, strict French chef that he is, can't quite keep up with Letterman's jokes. Watch Ripert make a pasta sauce from sea urchin while Letterman eats an entire stick of butter.
