Watch Chef Francis Mallmann Discuss 'The Art of Meat'

What's a highbrow way to talk about meat cuts? Get Argentine chef Francis Mallmann — whose book Mallmann on Fire was released last year — to talk about the "carne de mi carne" over an operatic soundtrack, then, juxtapose it all atop extreme close-ups of meat. Here's a video by NOWNESS that achieves just that, and Mallmann plays up the sensual elements of cooking by going for a gendered metaphor: "I believe that the art of the fire and cooking meat is very fragile, tender, and feminine," Mallmann says.
