How to Make New York-Style Pizza

With a little guidance, you can easily make the perfect pizza at home. Chef Bobby Hellen, of New York City's GG's, shares tips on everything from mixing and stretching the perfect dough to choosing well-balanced toppings.

HOMEMADE PIZZA DOUGH BY CHEF BOBBY HELLEN of GG's

Ingredients

1LB AP Flour
2oz Whole Wheat Flour
20g Salt
3.5g fresh yeast
13oz warm water
11.5g sugar

Instructions

Mix warm water with yeast and sugar for 10 minutes in a large mixing bowl.

Add flour and salt to the mixing bowl and mix until ball forms. All sides of the bowl should be clean and no flour should be sitting on the bottom of the mixer.

Portion dough onto an oiled surface. Place in large plastic bag or on a covered tray and let rest for 24 hours in the fridge.

When ready, let the dough ball sit until it comes to just under room temperature.
