Watch Albert Adrià Explain the Art of Conceptualizing a Dish

Albert Adrià makes beautiful food. The brother of ElBulli's Ferran Adrià now has his own Barcelona restaurant empire, and he plates his ingredients in a way that can be matched by few chefs. But Albert is more interested in what makes the dish, not how it looks. In this video, the Spanish chef explains his philosophy and prepares a few stunning plates.

"We work so that our cuisine is based on the quality of the product, which is essential, vital — there is no cuisine without good product — and then on the flavor," Albert says. "A good chef is one who, when serves a dish that he's cooked, makes others like it."
