An Umami-Rich Gin and Celery Cocktail

A savory drink of gin, salt water, seaweed, and celery ice.

Watch bar director Nick Duble of Atera balance tangy citrus and mouthwatering salty flavors in a cocktail he calls the Driftwood. This vegetal drink enhances the foresty flavors of gin with juniper oil, making it very appropriate for fall. Watch the video below and follow the instructions below to make this great gin cocktail at home.

DRIFTWOOD by NICK DUBLE

One serving.

What You'll Need:
2 oz. Gin
.75 oz. Lime juice
.75 oz. Kombu syrup*
2 dashes of salty water
2 Celery juice ice cubes
3 dashes of juniper oil
Jigger
Boston shaker
Coupe

*For Kombu Syrup: Pour 500 mL of boiling water over a 15 g piece of kombu and let steep for 8 minutes. Strain the liquid and stir in 500 mL of sugar to dissolve

Instructions:
Add and shake the first five ingredients until the ice cubes completely melt. After shaking, add three drops of juniper oil and then strain into a chilled coupe.
