Watch How Jamaica's Best Jerk Chicken Is Made

Two words: smoke and spice.

YouTube channel Foodie heads to warmer climates for this short and smoky video filmed at Montego Bay restaurant Scotchies, which is best known for its classic jerk chicken. In the video, Scotchies' cooks prep the iconic dish in the traditional manner: Spice-marinated meat is placed on an open-fire charcoal pit, cooking while it sits directly on top of a layer of pimento wood — it's then covered with sheets of metal. The final product is then roughly chopped and served to guests in tin-foil packets, best for easy transportation to the nearby beaches. Go, watch the video (and get very hungry) above.
