Watch a Noodle Master Make Soba by Hand

Here's the first video out of MAD 4, in which soba master Tatsuru Rai, the chef and owner of Hokkaido's Rakuichi Soba, makes soba noodles by hand. His rhythmic rolling, tidy piles of flour, precise cuts, and gentle movements are mesmerizing. Chef and host René Redzepi introduces Rai in a whisper and later comments, "This is to me a fantastic and interesting way to answer the question: What is cooking?" Go, watch:
