Noted U.K.-based chef Heston Blumenthal (Fat Duck, Dinner) tells Bloomberg why he decided to move his Fat Duck operation to Melbourne — and not New York City — for six months while he installs a new kitchen at the Bray, U.K. location. Though he thought seriously about coming stateside, Blumenthal says: "We looked and we looked and we looked. It's a nightmare. There's a reason why both (Joel) Robuchon and (Alain) Ducasse have closed. They've just gone. You cannot operate a restaurant under those conditions. It's impossible."
