After months of speculation about where Tartine Bakery would open its first outpost outside San Francisco, founder/baker Chad Robertson confirmed today he'll soon bring his bread to Tokyo, opening the country's first Tartine in Spring 2015. According to ISSF, Robertson will team with Japan's Think Green Produce for the brick-and-mortar bakery, taking up a space next to a craft brewery. (Robertson he hopes to create a synergy by using "some of the same grain" that goes into the beer.) Per ISSF, the location also promises a "long sandwich menu" in addition to the bakery's photogenic line-up of breads and pastries.
It's been a busy few months for Robertson: Two weeks ago, it was revealed that Tartine would supply the rice-infused buns for chefs Roy Choi and Daniel Patterson's upcoming fast-food concept. And in SF proper, Robertson and his team plan to open the third Tartine location in the city by early 2015.
