Watch Grant Achatz Turn the Clock Back to Trio, 2001

Here's the latest menu trailer from Chicago chef Grant Achatz's rotating menu restaurant Next, the Trio edition. Often cited as the restaurant where Achatz developed his own style, Trio closed its doors when Achatz left to open Alinea. Watch as a baby-faced Achatz shyly explains his hopes and dreams for his food and the future of cuisine with all the wonder of a child. Images of the dozens of world-class chefs who passed through Trio's kitchen between 2001 and 2003 float across the screen before shots of Trio's elegant, hyper-modern cuisine. Says Achatz of those days: "...Trio was a garage band... We were seasoning the food with... emotion." The restaurant is currently taking reservations for the Trio menu, which runs until December 21, 2014. Go, watch:
