Kaiseki Wire

Screen Shot 2014-08-08 at 2.22.50 PM.pngChef Niki Nakayama may be the only female kaiseki chef in the world, reports the Wall Street Journal. At her LA-based n/naka, Nakayama commands the kitchen, but when she was starting out things were tough: In 2011, the 5-foot-one chef was working in a sushi restaurant when a Japanese man walked in, saw her in the kitchen, turned around, and left. She says he must have thought, "This can't be a real sushi restaurant—or a good sushi restaurant." [WSJ. Magazine][Photo]
