Chef Niki Nakayama may be the only female kaiseki chef in the world, reports the Wall Street Journal. At her LA-based n/naka, Nakayama commands the kitchen, but when she was starting out things were tough: In 2011, the 5-foot-one chef was working in a sushi restaurant when a Japanese man walked in, saw her in the kitchen, turned around, and left.
