First Look: Yigit Pura's New Cookbook Sweet Alchemy

Here's Sweet Alchemy: Dessert Magic from San Francisco pastry chef Yigit Pura. Pura, who runs Tout Sweet Pâtisserie in San Francisco and won the first season of since-canceled Top Chef Just Desserts, uses the book to explain the simple methods behind seemingly complex desserts. Caramelized sugar may seem simple, but only until it's upgraded as Pistachio-Vietnamese Cinnamon Brittle. Other ingredients the book considers are flour and butter, chocolate, fruit, and more.

Pura's book contains plenty of personal essays, technical instruction, and recipes for a wide swath of skill levels. The photos are by Frankie Frankeny, who has done photography for a good number of Bay Area cookbook, including books from Humphrey Slocombe, Model Bakery, Absinthe, Miette, and Michael Chiarello.
