Food Blogger Adam Kuban to Turn Pizza Pop-Up Into Permanent Restaurant

Serious Eats co-founder and pizza enthusiast Adam Kuban tells Eater co-founder and Resy CEO Ben Leventhal that there are plans in the works for a permanent location of his popular pop-up Margot's Pizza in New York City. In an epilogue to an interview on Leventhal's personal blog, Kuban reveals, "I'm actually staying in NYC to open a bar pie place now. In the very early stages — still writing my business plan." Kuban had originally planned to go to Portland, Oregon to open an outpost of famed Brooklyn pizzeria Paulie Gee's. Kuban tells Eater NY that at the moment he has "no definite timeline yet," but when he "raises more capital" he will start scouting locations.
