Jon Snyder founded Ciao Bella Gelato Company in 1984 and sold it in 1989. Years later, he went on to found Il Laboratorio del Gelato in New York City. In a profile on Narratively, Snyder reveals that he's obsessed with "one-note flavors" like vanilla and espresso, and that he won't make a flavor if it doesn't intrigue him. When he was asked to make caviar ice cream, he refused: "I didn't want to contaminate my machinery with fish roe, so we didn't do it." [Narratively]
