From coast to coast, America's restaurateurs are getting ready to unleash a whole new crop of restaurants upon the nation in what promises to be a busy Fall openings season.
Prominent chefs are spreading their wings in new cities: Daniel Boulud, for example, is opening in Boston and Washington, DC (Bar Boulud, DBGB Kitchen + Bar). Other big names are sticking to their home turf, like José Andrés (China Chilcano, Washington, DC), Chris Cosentino (Cockscomb, San Francisco), Jon Shook and Vinny Dotolo (Jon & Vinny's, Los Angeles), Michael Solomonov (Abe Fisher, Philadelphia), and Paul Kahan (Dove's Luncheonette, Chicago).
There are also some exciting moves. NYC expat Sara Kramer is setting up in Los Angeles with a falafel shop, Matt Jennings has left Providence behind for Boston (Townsman), and Gavin Kaysen has left the Boulud empire to open his own restaurant in Minneapolis (Merchant). Chef Ron Eyester has set his sights on Atlantic Station for his first restaurant outside of Atlanta's Morningside neighborhood, where he has helped shape the dining scene with Rosebud, Timone's, and The Family Dog. Reps for Diner say the concept is inspired by Eyester's "childhood years spent in New York" and that the look will be "classic dinner with a spin."

From the team that brought Austin the hit restaurant Uchi comes this combination pizzeria and bakery. The group's director of culinary operations Philip Speer leads here, and he tells Eater Austin that while he will be serving "hand-stretched 12-inch pizzas," the restaurant "want[s] to stay away from being pigeonholed as this or that style of pizza." There will also be pastries and small plates.

It's been over a year since the restaurant was first announced, but Austin's modern Southern destination is almost ready to open. Chef duo Michael Fojtasek and Grae Nonas have already undertaken a major renovation of the space, and after a series of successful pop-up dinners, the Olamaie team has Austin pumped for the grand opening of their Southern fine dining restaurant.

Baltimore

The Horseshoe Casino opens to the public next week, bringing with it the taqueria by chefs John Besh and Aarón Sánchez. Last year, Besh described the Johnny Sanchez menu as having "fun, whimsical farm-to-table tacos and a fun, casual Mexican food and tequila bar all in one." A press release from the casino adds that the two chefs will "collaborate on everything from the perfect tacos and tostadas, to the beer, wine, and cocktail list, to the décor and atmosphere." Keep an eye out for a Johnny Sanchez to open in New Orleans this year too.

After 10 years, chefs Matt and Kate Jennings have closed their Providence, RI restaurant Farmstead, Inc. and have sets their sights on Boston. Townsman will be located in the new Radian building and Eater Boston writes that "it will surely be a continuation of their commitment to local sourcing, artisanal foods, and New England traditions." Based on Jennings' three wins at COCHON 555's Boston competition, pork is bound to be featured prominently. Reps for the restaurant say the timing for the opening isn't solid yet, but Bostonians are nevertheless waiting with breath bated for its arrival on the scene.

Bar Boulud

Bar Boulud, chef/restaurateur Daniel Boulud's first foray into Boston, will open at the Mandarin Oriental. He tells Eater Boston that the restaurant will celebrate New England seafood and in Boulud tradition, offer a strong charcuterie program. Aaron Chambers will be the leading the kitchen here, and he tells Eater Boston that he sees the restaurant appealing to "a different spectrum of people. You can come there and spend $500 for two, or you can come there and spend maybe $100 for two, so it's offering many levels."

Boston's restaurant power couple Tim and Nancy Cushman are turning their attention back on Boston, after opening The Roof at Park South in New York City. Their next project is an izakaya at the upcoming Verb Hotel. Reps for the restaurant tell the Boston Globe that the menu will "showcase a whole different side of Japanese culture ... kind of Tokyo pop" with "creative maki rolls."

In what was once a wine bar next to his restaurant McCrady's, chef Sean Brock will be opening a brand-new restaurant that is "inspired by the food and culture of Mexico." Guests should expect casual service, a reasonably-priced menu, and, from Brock's Instagram activity, homemade tortillas. Reps say the restaurant is "on track" to open in the first half of September.

Dove's Luncheonette

Paul Kahan is at it again, and this time he's offering what reps are calling "Mexican-inspired Soul food, alongside a tequila and mezcal-focused bar program." The retro-inspired Dove's Luncheonette will be located next door to Kahan's taco shop Big Star, and chef Dennis Bernard is taking charge of the kitchen. Eater Chicago reports the restaurant will have 40 seats, and will serve breakfast, lunch, and dinner.

The team from RPM Italian is once again partnering with chef Doug Psaltis, who tells Eater Chicago he is looking to create a "guilt-free steakhouse" that treats things like fish and vegetables with care. The 8,500-square foot, 150 seat restaurant will feel "old fashioned with a little drama to it."

As he previously teased, chef/The Chew host Michael Symon is opening a new restaurant in Cleveland. A press release describes Mabel's BBQ as a "Cleveland-style barbecue restaurant" located next door to his restaurant Lola Bistro. The restaurant will seat 100, offering menu items like smoked chicken wings, crispy pig ears, and applewood-smoked barbecue topped with a mustard-based sauce. Along with craft beer and whiskey, the bar will offer moonshine.

Chef Kate Williams is about to make a big impact on the Detroit dining scene with the opening of two new restaurants in the Grand Army of the Republic Building. First up is Republic, an 85-seat "old world European tavern" that will be the larger of the two concepts, Williams tells Eater Detroit. Sharing a kitchen with Republic is Parks & Rec, so named for the building's former use as home to the city's department of parks and recreation. This smaller restaurant will be serving more casual fare like "boozy milkshakes, hand pies, sandwiches, homemade pizza rolls, and 'a lot of vegetarian staples.'" Williams tells Eater she expects Parks & Rec to open in October, with Republic following in November.

On October 9, the retail and entertainment destination Downtown Summerlin will open in Vegas, bringing with it a slate of highly anticipated restaurants. Leading the pack is Wolfgang Puck's first restaurant off the strip, to be called Wolfgang Puck Bar & Grill. There will also be a new restaurant from Elizabeth Blau and Kim Canteenwalla, which will feature "all things grilled, roasted, shucked and seared" reports Eater Vegas. There are plenty of other restaurants in the mix, too, like Moto Cafe's second location, Crave, Sushi Loca, and Nekter Juice Bar, plus reps for Downtown Summerlin say more will be announced in the coming weeks. Do note that the exact opening dates for each restaurant are not yet confirmed.

The SLS Vegas officially opens this Saturday. It will be the home to the much-hyped Bazaar Meat by José Andrés (which began taking reservations back in June). Andrés explained earlier this year that while people will probably "describe it as a steakhouse," he wants to "do so much more than that" with unique offerings like a raw meat bar. Andrés is also opening Ku Noodle in the SLS, where it will join restaurants like Cleo, Katsuya, the Griddle Cafe, Umami Burger, and 800 Degrees Pizza.

Chef and NYC expat Sara Kramer is keeping tight-lipped about her two upcoming LA projects, but does confirm to Eater that she and her former sous chef Sarah Hymanson are hoping to get the first, a casual falafel shop, open later this Fall. Kramer won't reveal the name or the address at this point, but she says it will be "very vegetabley, as one might expect from us. We'll be grilling house-made bread to order. It will be a much more vibrant and playful approach to the classic rendition." The second concept, a sit-down restaurant, will come after.

Jon & Vinny's

Earlier this Summer, chefs Jon Shook and Vinny Dotolo told Eater that their plans for the Damiano space, located across the street from their hit restaurant Animal, would include a commissary kitchen, a wine shop, and a restaurant, tentatively called Jon & Vinny's. Reps say the name isn't 100% finalized yet, but that all systems are go with the first phase of opening: the production kitchen is likely to be up and running in three weeks, with the wine shop, and then the restaurant to follow. The restaurant opening might creep into Winter, but the group is looking to open fully by the end of the year. Not too much is known in terms of what kind of food Jon & Vinny's might serve, but the chefs told Eater to expect "more approachable" fare in a concept that they "could potentially do more of."

Miller and his team are hoping to open Labor Day weekend, but a rep from the restaurant notes that this might push a bit later depending on construction that still needs to be done.

Miami restaurant power couple chef Michelle Bernstein and her husband/partner David Martinez are opening a new restaurant together at the new Thompson Miami Beach hotel. The restaurant is a big one, with 267 seats, and the kitchens will provide "poolside and bar service, as well as in-room dining and on-site catering."

Chatanooga chef (and five-time semifinalist for the James Beard Best Chef: Southest award) Daniel Lindley is heading to Nashville. Rumors of Lindley's move began back in April, and Lindley confirmed in July that he would be opening 5th & Taylor where he will serve a "regional and seasonally focused American menu." This is no small restaurant either; the interior space clocks in 6,200 square feet with an additional 2,500 square feet of outdoor patio and bar space, seating 250 in total.

After a over a year of intense legal battles and a forced shutter, the doors at iconic New Orleans restaurant Brennan's will once again be open this Fall under the leadership of proprietors Terry White and Ralph Brennan. Heading up the kitchen is Slade Rushing, one half of the chef duo at MiLa. Eater Nola speculates that Rushing may well keep some of the restaurant's most famous menu items, and reps from the restaurant say the menu will offer "a selection of traditional New Orleans favorites as well as distinct seasonal daily offerings." Front of house is getting some attention too with a multi-million dollar renovation and a redesign by Richard Keith Langham.

This highly anticipated restaurant from Mexico City chef Enrique Olvera is in its final stretch. Olvera also has his eye on opening a tortilleria in Brooklyn.

White Street is acclaimed NYC chef Floyd Cardoz's restaurant with a "global" bent. The Torrisi team has a bunch of openings in the pipeline this Fall, and leading the pack is Dirty French at the Ludlow hotel. Eater NY reports that it will be a a French bistro and the group's "first real departure from Italian cooking." Partner Jeff Zalaznick tells Eater that the group's High Line restaurant project is scheduled for a mid-October opening, and that an Upper West Side location of Parm is slated to debut in October too.

ABC Home Grown

ABC Home Grown will be Jean-Georges Vongerichten's third in the complex connected to ABC Carpet & Home, joining his ABC Kitchen and ABC Cocina. Abe Fisher

From the restaurateur duo that brought Philadelphia hit restaurants like Zahav and the Federal Doughnuts mini-chain comes Abe Fisher. Eater Philly reports that Abe Fisher will "focus on cuisine of the Jewish diaspora," which means small plates inspired by "Montreal, New York City, Hungary and beyond." The restaurant's sister project, a hummusiya named Dizengoff, has just opened, and reps for Abe Fisher promise to be open in time for Center City Restaurant Week, which kicks off on September 7.

Lo Spiedo

Things are finally moving at chef/restaurateur Marc Vetri's long-awaited Navy Yard project. Eater Philly reports that Vetri has named Scott Calhoun as chef de cuisine of Lo Spiedo, where he will oversee a menu that focuses on rotisserie and grilled meat (the name means "the spit" in Italian). The restaurant will have 150 seats, outdoor seating, and will be open for lunch and dinner. Per Eater Philly editor Carly Szkaradnik, the opening might roll past September considering the scope of the project.

Eater Portland is calling this izakaya "the binchō-tan and booze arm of the sustainability minded Bamboo Sushi restaurants." The menu will feature kushiyaki (skewers) cooked over Japanese charcoal and a selection of small plates. Brunch goes in a slightly different direction with a signature bacon flight.

BTU Brasserie

Chinese food and house-brewed craft beer are the winning combination at the heart of the soon-to-be-open BTU Brasserie. Chef Chris Bogart says he and partner Nate Yovu are "getting down to final finishes and inspections" at their 4,100-square-foot, 40-seat restaurant and brewery, which according to Eater PDX, will offer a menu influenced by "Schezuan and Hunan cooking styles," and meat roasted in a custom barbecue smokehouse.

San Diego is eagerly awaiting its first Eataly-esque food destination, Bottega Americano. Chef David Warner and company are transforming 8,000 square feet into a food hall with what Eater San Diego calls "interactive food bars." A new press release from the group explains that this "restaurant-meets-market concept" will pay homage to the look and feel of "1950's Italian glamour with a blend of crisp, modern graphics, and old-world charm."

Industry vet Matt Spencer is teaming up with executive chef Brian Redzikowski to bring San Diego this 8,000-square-foot, two-story dining destination. An early look at the menu from Eater San Diego reveals a seasonally-inclined roster of dishes. The adjacent space will eventually be home to the Donut Joint, which Eater San Diego reports will "have a rooftop patio, and serve a selection of baked, fried and gluten-free donuts, plus organic drip coffee." Reps say Donut Joint is looking at a February or March opening.

Unnamed Daniel Patterson Group Restaurant

It doesn't have a name yet, but all systems are go for the Daniel Patterson Restaurant's group's next project with chef Brett Cooper. Reps for DPG tell Eater: "The restaurant is the first of what will become a new collaborative direction for the DPG brand: restaurant incubator. DPG is providing the infrastructural support and helping find funding to allow Cooper to open, run, and co-own his own restaurant." Expect 45 or so seats, a chef's counter, "creative Californian flavors" made with produce grown specifically for Cooper, and desserts from Sean Ehland, formerly of McCrady's.

Arguello

Days after opening of her Presidio restaurant The Commisary, chef Traci Des Jardins announced she'd be bringing another restaurant to the Presidio. Arguello will be a Mexican restaurant located at the historic Presidio Officers' Club. With 118 seats, a 22-seat bar, and a heated patio, the restaurant will be "a more upscale, sit-down conception of Mexican than Des Jardins' fast-casual Mijita outposts," reports Eater SF.

This is a mega-project from the chefs who brought Seattle the acclaimed restaurants Revel and Joule. Rachel Yang and Seif Chirchi are opening four concepts in one 4,000-square-foot space. Seattle Met reports that there will be a quick-service noodle bar with a daily changing menu of handmade noodles and rice cakes, a sit-down Korean barbecue restaurant where two-thirds of the tables have "built-in grills," a bar with a focus on "international beers," and lastly a "parfait window."

Chef/restaurateur Josh Henderson and his Huxley Wallace Collective are opening what they are calling a "sports bar" where "the vibe will be fun, the food and drinks excellent, and the flat screens plentiful." There will also be "a large wood-fired grill and rotisserie, roof top garden, an AstroTurf back bar," and "outdoor fire pits." Henderson recently told Eater Seattle that he wants to be open in time for the first Seahawks game on September 4, and that the restaurant will be open that week "come hell or high water."

John Sundstrom Central Agency Building Projects

Seattle chef John Sundstrom is bringing three concepts to the Central Agency Building this Fall, reports Eater Seattle. Bitter/Raw will occupy the mezzanine and serve up an extensive raw menu and an assortment of amaros and aperetifs. On the ground floor will be Slab Sandwich + Pie, a daytime sandwich shop that will also have espresso, slab pie, juice, plus a limited selection of grocery items. But perhaps the biggest news is that Sundstrom is relocating his beloved restaurant Lark to the CAB, where he will expand the menu and add a full-sized bar.

PR reps tell Eater that this restaurant from chef Kevin Nashan is opening "sometime in the next couple of weeks." The restaurant is down the street from Nashan's 10-year-old Sidney Street Cafe and as Eater reported earlier this Summer, the focus is seafood and the "Acadian tie between Northeastern and Louisiana cuisines." This means diners can expect a raw bar, chowders, lobster rolls, oyster Po'Boys, and seafood boils.

Michael Mina is partnering with chef and author Don Pintabona to bring a new concept to the St. Petersburg development the Sundial. According to a press release, FarmTable Kitchen will "offer a seasonally inspired menu with a casual farm-to-table feel that brings the best of Mina's California alongside Pintabona's Italian flavors." FarmTable Kitchen will be located within a brand new, food hall concept from the duo to be called Locale Market. The 20,000-foot retail destination will have a gourmet grocery, a delicatessen, a coffee bar, a wine bar, and a bakery.

It's been in the works for more than a year, but chef/restaurateur Daniel Boulud is almost ready to open his first DC outpost, in the CityCenter development. Boulud is bringing former db Bistro Moderne executive sous chef Ed Scarpone to run the kitchen at DBGB Kitchen + Bar. The restaurant's website describes the concept of DBGB Kitchen + Bar as "French brasserie meets the American Tavern" and Boulud tells Eater: "We don't do carbon copies: It's chef driven and market driven."
