Could spinach be the fuel of the future? Modern Farmer looks into a study that is trying to figure out how to convert leafy greens into biodegradable energy. Says Yulia Pushkar, an associate professor of physics at Purdue University: "Spinach leaves, like all other green plants and cyanobacteria, have unique machinery that collects sunlight and converts it into chemical energy...
