Watch the Story of Chevre, as Told by PBS's Original Fare

PBS food show Original Fare takes a trip to France to learn about the traditions associated with cheese-making in Central France. At one farm/creamery that specializes in Selles-sur-Cher cheese, goats are raised on-site and milked twice per day, and unsurprisingly, traditions are taken seriously: The goats "must consume a diet of 75 percent locally sourced food," allowing the terroir in hay to influence the flavor of the cheese. A "serum" is then added to the goat's milk to increase acidity and provide a "floral bouquet," resulting in a product that probably tastes much better than that sounds. Go, watch:
