Minneapolis chef Jamie Malone, a Food & Wine Best New Chef in 2013, announced she'll be leaving her position as chef de cuisine of Sea Change to join the new restaurant by fiancee/new Minneapolis transplant Erik Anderson. Anderson, a F&W Best New Chef in 2012 and co-founder of Nashville's Catbird Seat, plans to open a French restaurant called Brut somewhere in the city's North Loop.
Erikson tells Mpls.St.Paul Magazine that the new concept — which does not have a set location yet — will be "something like what we did at Catbird," with a casual atmosphere but "refined food." In the meantime, the duo plan a series of pop-ups previewing some possible Brut dishes.
