Watch Adam Rogers Explain the Science of Booze

Author Adam Rogers, whose book Proof: The Science of Booze was released earlier this year, stops by the Talks at Google to chat about just that: Why and how humans have been producing booze for thousands of years. Rogers summarizes why yeast makes alcohol (it has something to do with where primordial yeast lived and how fermentation occurs in nature) and why humans were inspired to control fermentation by domesticating yeast. Essentially, humans thousands of years ago were in the game to create sugar: "Water is medium, not message. This is message; sugar is power."
