Austin's Paul Qui celebrated the first-year anniversary of his namesake restaurant Qui by making some big changes: primarily, by converting into a tasting-menu format. In an interview with Eater Austin, Qui reflects on the restaurant's evolution, which he says is fueled by wanting to "create a foundation for something more epic."
