This past week was The Five Days of Meat on Eater. Did the torrent of meat envelop you? Hopefully. This meat-themed week had everything, from the history of Spam to a guide to burnt ends in Kansas City to the launch of the new column Smoked (with a profile of Pecan Lodge in Dallas). There were profiles of butchers doing important work, looks at iconic meat dishes, an in-depth barbecue guide, a virtual charcuterie board of charcuterie boards, meat dreams, a little self-loathing, and so much more.
