Watch Science and Aaron Franklin Explain How to Make Great Barbecue

Here's a video from YouTube channel It's Okay To Be Smart that explains the science behind barbecue. Aaron Franklin, co-owner of Franklin Barbecue in Austin, breaks down the important components of barbecue such as how wood choice is crucial. The video also includes animated explanations of everything from the science behind why the meat browns (the Maillard reaction) to the chemistry of how a smoke ring forms. It even compares barbecue to making Jell-O, explaining that when someone cooks meat slowly the collagen melts and turns into gelatin, which is exactly what's in Jell-O, thus, "barbecue is meat Jell-O."
