The country is in full swing of Summer restaurant opening season, and as usual, there are a lot of exciting newcomers on the way in cities from Atlanta to Washington, DC to Seattle.
Some of these openings are imminent: Jon Shook, Vinny Dotolo, and Ludo Lefebvre are going to be opening their next collaboration any week now (Petit Trois), while Bryan Voltaggio is expanding one of his DC concepts to Baltimore this very weekend (Aggio). Over in Houston, Justin Turner is turning his food truck into a brick-and-mortar restaurant next week (Bernie's Burger Bus), and former Chanterelle chef David Waltuck is poised to charm New York City all over again in a few days (élan).
There are also a lot of expansions and new projects from familiar faces on this list. Legendary pizzaiolo Chris Bianco is bringing his equally legendary Phoenix pizzeria to Tucson (Pizzeria Bianco), St. Louis chef Kevin Nashan is opening his second restaurant after 10 years at Sidney Street Cafe (The Peacemaker), Benu chef Corey Lee is about to hit San Francisco with a French-inspired bistro (Monsieur Benjamin), and Mike Solomonov is hitting Philadelphia with two new restaurants (Dizengoff and Abe Fisher). New York City is also going to be full of expansions from the likes of the Torrisi boys (Dirty French), Enrique Olvera (Cosme), Cesar Ramirez (Brooklyn Fare Manhattan), and the Union Square Hospitality Group (Marta).
Chicago is also set to have a busy Summer with new restaurants and concepts from big guns such as Rick Bayless (XOCO Wicker Park), Paul Kahan (Untitled Project), and Tony Mantuano (River Roast). Another Chicago chef, Tony Hu, will make his Vegas debut in August (Lao Sze Chuan), around the same time that the SLS will open its collection of buzzy restaurants, including two from José Andrés (Bazaar Meat and Ku Noodle). The Luminary

People in Atlanta are wildly excited for the opening of the Krog Street Market this year, including this restaurant from Top Chef alum Eli Kirshtein. The Luminary will be an American brasserie that Eater Atlanta writes, "will feature regionalized and updated bistro fare and includes a focus on raw bar offerings." There's also plenty of buzz for other tenants in the soon-to-open market, including a new restaurant from local butchers (The Cockentrice), and two places from the folks behind The General Muir: a sandwich shop (Fred's Meat and Bread), and a modern Middle Eastern restaurant (Yalla). So do look out for those, too.

This Summer, chef Ron Eyester is opening a diner named Diner in Atlantic Station, his first restaurant outside of the Morningside neighborhood whose dining scene he has helped cultivate with restaurants such as Rosebud, Timone's, and The Family Dog. Eyester told Eater Atlanta last year that the forthcoming restaurant will offer a little bit of everything, including corned beef, pot roast, Southern food, housemade sodas, and more.

Co-executive chefs Michael Fojtasek and Grae Nonas announced Olamaie last Summer, and a series of pop-up dinners has kept excitement levels high ever since.

Bryan Voltaggio opened his Italian restaurant-within-a-restaurant Aggio earlier this year inside his Washington, DC restaurant Range — and now he is on the verge of opening a second outpost of the concept in Baltimore. A press release describes Aggio as a "relaxed fine-dining restaurant," offering dishes like a blue crab pasta that involves spinach tagliatelle, buttered popcorn, and Voltaggio's spin on Old Bay.

Cypress chef Craig Deihl is working on bringing a sandwich and butcher shop to Charleston this Summer, telling Eater he hopes to open sometime in the middle to end of August. Eater Charleston, which named this one of its openings to watch this Summer, reports that the menu items will include burgers, breakfast sandwiches, a "Pâté Melt," and Deihl's charcuterie.

XOCO Wicker Park

The Wicker Park outpost of Chicago chef Rick Bayless' XOCO restaurant has about a month to go, according to Eater Chicago. As reported in the Fall, this new location will offer the same Mexican street food and snacks as the original location in River North, but will offer a larger space with table service and a bar. After that, keep an eye out for Bayless' other forthcoming project, details of which remain a mystery.

Chicago chef and restaurateur Paul Kahan and his One Off Hospitality group are at it again this Summer with a mysterious new project in Wicker Park. The only details Kahan shared with Eater last week were that it'll be "a little 42-seat diner, kind of Tex-Mex" that will be connected to his popular restaurant Big Star. James Beard Award-winning Chicago chef Tony Mantuano is about to hit the city with a new restaurant perched on the Chicago River. Mantuano told Eater late last year that the restaurant was inspired by the boom of excellent roast houses in London. And so it follows that the restaurant — which will serve roast chicken, fish, and beef — will be named River Roast.

Construction has been underway for quite some time at chef Brian Laird's highly anticipated new restaurant Sarto's, but it looks like the end is in sight. Opening in Denver's Union Station, this seafood restaurant will call to mind New York's Grand Central Oyster Bar with a selection of raw oysters, lobster, clam rolls, smoked fish, and more.

This Summer looks to be it for the forthcoming Wright & Co. Since it debuted in 2010, people in Houston continue to just lose their minds over the burgers at chef Justin Turner's food truck, Bernie's Burger Bus. Next week, they'll be able to lose their minds all over again when this food truck goes brick-and-mortar with this location in Bellaire that includes a school bus as part of its decor. Eater Houston reports that the menu items here will include poutine, boozy milkshakes, beer, and some alternatives to beef patties.

On August 23rd, the SLS resort will open in Vegas and bring with it a whole slew of highly anticipated restaurants. Eater Vegas reports that OpenTable is already accepting reservations for Bazaar Meat by José Andrés, Cleo, Katsuya, Ku Noodle, and the Griddle Cafe starting August 30. Other food options here include the fast-casual Umami Burger and 800 Degrees Pizza.

Chicago-based empire-builder Tony Hu is set to expand to Las Vegas this Summer with an outpost of his Sichuan restaurant Lao Sze Chuan. Eater Vegas hears that the restaurant is planning to open by the end of August and notes that the original location of Lao Sze Chuan in Chicago has earned a Michelin Guide Bib Gourmand award in 2012 and 2013.

As reported earlier, the restaurant will offer retro arcade games and a bocce court while "Canteenwalla plans a comfort food menu while Blau plans to add her own healthy touch to dishes."

Meanwhile, Eater LA notes that this will be a "wine bar-type experience serving well-executed French cuisine."

After teasing Los Angelenos with a food truck pop-up, Big Gay Ice Cream is just about ready to start serving the city full-time this Summer. UPDATE 6/30: Co-owner Bryan Petroff tells Eater that construction delays mean that Big Gay Ice Cream is now eying a September opening in LA, as well as the newly announced Philadelphia location.

James Beard Award-winning Madison chef Tory Miller is gearing up to open his third restaurant, Sujeo, later this Summer. There are also thoughts of a dim sum menu served on carts, as well as dishes like dandan noodles, banh mi sandwiches, and barbecued chicken and pork.

Chef Tim McKee took over Minneapolis' Uptown Cafeteria space last month with plans to renovate and replace it with a new restaurant named Libertine. St. Paul Magazine offers a peek at the menu that includes various cuts of beef, pork, and lamb, as well as oysters, fish, chicken, and vegetarian options like soba noodles and caramelized cauliflower.

Chef and Chopped judge Maneet Chauhan is behind one of Nashville's big openings this year, Chauhan Ale & Masala House. Mexico City chef Enrique Olvera — he of the world-renowned restaurant Pujol — is headed to New York City this year to amp up the Mexican food game there in a big way. Olvera's first New York City restaurant will take a casual approach to Mexican cuisine, and it will come along with a Brooklyn tortilleria. Olvera last told Eater that he was aiming to open Cosme in June, so it should be coming up soon.

David Waltuck, chef of the beloved and shuttered Chanterelle, announced earlier this year that he plans to open a new restaurant in 2014. Earlier this week, the New York Times revealed that the restaurant will open on June 30.

BTU Brasserie

Here's an interesting newcomer headed to Portland: a Chinese restaurant/brewery from two Burnside Brewery alums. Eater PDX reported earlier this week that BTU Brasserie is going to be a 4,100-square-foot space that includes a 40-seat dining room and a 600-square-foot brewery with a seven-barrel system. The menu includes roast meat and Peking duck off their custom barbecue smokehouse, as well as steamed buns, noodle dishes and, eventually, dim sum.
San Diego

San Diego is getting excited for the opening of its first-ever Eataly-esque concept, Bottega Americano. Chef David Warner and partner Giuseppe Ciuffa have taken this 8,000-square-foot space and are putting in what Eater San Diego describes as "interactive food bars" of pizza, pasta, seafood, salads, and sweets, as well as a full-service restaurant and bar, and a retail arm. It should be on track to open in August.

San Francisco diners have been looking forward to the latest from Benu chef Corey Lee, Monsieur Benjamin, and now that wait is almost over. The team tells Eater that they expect to open the restaurant by the end of August, explaining that it is "a modern and casual restaurant and bar that is inspired by the great Parisian bistro culture, and traditions of French cooking." The executive chef here is Jason Berthold, while master sommelier Yoon Ha is selecting a list featuring French and California wines. Monsieur Benjamin will also offer late-night dining and, eventually, brunch.

Seattle neighbor Bellevue is getting a fine dining restaurant this Summer with the arrival of 99 Park. Eater Seattle reports that the team of "enthusiastic young pros" running the restaurant include executive chef Quinton Stewart and general manager Charles Veitch. The menu here is going to be farm-to-table and include dishes like duck breast with morels, mountain huckleberries, and farro.

Joe Cassinelli, the man behind popular restaurants Posto and The Painted Burro, is at it again with the opening of Rosebud American Kitchen & Bar. Eater Boston reports that the restaurant will offer barbecue, burgers, and Southern food, while Cassinelli is preserving the landmark exterior of what was the Rosebud Diner.

Now with 10 years behind him at Sidney Street Cafe, St. Louis chef Kevin Nashan is gearing up to open The Peacemaker Lobster & Crab Co. As Eater reported earlier this month, the restaurant is inspired by the "Acadian tie between the Northeastern and Louisiana cuisines," meaning dishes will include Nashan's takes on chowder, lobster rolls, and fried oyster Po'Boys. It's expected to open in early August.

At long last, Chris Bianco is on the verge of opening his Tucson outpost of his famed Pizzeria Bianco. Yes, the pizza that made Phoenix, Arizona, the unlikely epicenter of American pizza-making has set an opening date of July 24, according to Bianco's Instagram announcement. Get ready.

It's been a tease for some time now, but this looks to be the year that wunderkind Erik Bruner-Yang opens his sophomore effort Maketto on DC's H Street NE. The Toki Underground chef is teaming up with Will Sharp of clothing label DURKL on the project that will channel an Asian night market, with a chef's table, patio seating, a coffee bar, and more. A rep says that they're now aiming to open in late Summer, but be aware that this opening could also bleed into Fall.

Rural Society

Philadelphia-based chef Jose Garces is expanding to DC this Summer with the July 3 opening of Rural Society. This Argentine steakhouse — one of Eater DC's most anticipated openings — will offer charcuterie, various meats and fish prepared on a parilla, house-made pastas, and Argentine pizzas, among other things. AvroKo is behind the restaurant's design, which a press release says is in part inspired by "the rugged Gaucho, South American cowboy, culture as well as the refined style of Buenos Aires."
