Grant Achatz Has a Location for New Chicago Restaurant

Last weekend at the Eater Lounge in Aspen, Alinea chef Grant Achatz talked about a new restaurant in Chicago his team is working on with the target date of "February or March." Crain's cites "people familiar with the restaurateur's plans" and reports that Achatz and his partner Nick Kokonas have signed a lease to take over Homaro Cantu's recently-closed restaurant iNG. Conveniently, the iNG space is immediately next door to Next and Aviary. "I think Grant could open a restaurant on the moon and do well," said the owner of a Chicago-based restaurant and bar brokerage. No name has been announced yet, but the restaurant is a "clear but evolving vision."
